Morten, can you find out what the nutritional differences are between baby vegetables and adult (fully grown) vegetables? About 6 months ago I started asking this question of a nutritionist (Marion Nestle) and PCRM (Physician’s Committee for Responsible Medicine) but have received no answer yet.
It was about 15 years ago that celebrity chefs started to introduce the use of baby vegetables because they are more tender. But what if baby vegetables are more tender because immature vegetables lack their full quota of minerals? None of the standard references on food nutrient levels (such as Bowes & Church or the USDA database even discuss baby vegetables. Can you answer this question? Thanks for reading.
